I get asked a lot about maintenance in terms of eating after drastic weight loss (I lost seven stone from 2020-2021). The way I now eat isn’t at all recognisable to how I used to eat and is a whole lot more formulaic; but basically I mostly eat for sustenance when I’m at home and then when I am out and about with people am relaxed whilst still paying attention to portion size. I mostly stay away from carbs at home, but eat them when I am out to dinner or lunch.
In terms of that formula, well I’m not going to claim it’s super sexy but it does the job and keeps me happy and running and at the weight I want to stay at. I am the queen of having a routine, so after my Tuesday Ocado comes pre 7 am, these are the things I do to make the week easy.
My food prep for the week consists of hard boiling a dozen eggs (usually around 20 minutes)-- I’m only going to eat the egg whites so timing is less crucial and roasting 6 chicken thighs and doing the prep for this Epic Summer Salad. Definitely do not dress the salad until you are ready to eat it, and I bulk it out with lots more lettuce and tend to add roasted corn too. During the week I can add any protein to that salad or grilled asparagus or roasted butternut squash. It’s also a crowd pleaser at any barbecue. It’s crazy delicious.
All of this sets me up for the week so if I am hungry, instead of heading to Deliveroo, I’ve got chicken already cooked and ready to go into anything I whip up and breakfast is sorted and standing by when I come home from running.
Food prep for the week takes less than an hour while I catch up on Below Deck and then I’m all set to go.
